Medhu vada

Ingredients:
  • 2 cups Urad dal
  • 1 tbsp Rice
  • 1 cup Onions finely chopped
  • 1/2 tbsp Peppercorns
  • 1 green chili
  • 1/4" piece Ginger
  • 1 tbsp Coconut shredded
  • Salt to taste
  • Oil for deep frying



 
Method:

  1. Wash and soak urad dal and rice in water for 1 hour.
  2. Drain all the water and keep aside.
  3. Now take a small mixie jar, add green chili, ginger, peppercorns and soaked dal.
  4. Grind to a fine paste adding very little water.
  5. The grounded paste should be a thick batter.
  6. Now transfer to a bowl, add onions, coconut and salt.
  7. Beat well with your hand.
  8. Now heat oil for frying in a medium flame.
  9. Keep a bowl of water.
  10. Now dip your hand in water and take a small ball of batter.
  11. Make a hole in the center of the batter with your thumb and immediately drop into the oil.
  12. Now again dip your fingers in water and take the batter.
  13. Repeat this process for all the batter.
  14. Do not crowd the vadas while frying.
  15. Do it in batches.
  16. Once golden color is formed flip the vadas on to the other side.
  17. Fry until nice golden brown color.
  18. Remove and place on a paper towel.
  19. Serve hot with ginger chutney.
