Spicy Farfalle Pasta

Ingredients:
  • 1 cup Farfalle pasta dried
  • 2 Tomato pureed
  • 1/2 cup Onion diced
  • 1/4 cup Carrot grated
  • 1 tbsp Garlic crushed
  • 1/4 cup Olive oil
  • 1 tbsp Butter
  • 1 tsp Oregano dried
  • 1 tsp Basil dried
  • 1 tsp Sugar
  • 1 tsp Paprika powder
  • 1 tbsp Celery chopped
  • 2 tbsp Shredded Cheese 
  • Salt and Pepper to taste


Method:
  1. Boil lots of water in a large vessel, add 1 tsp oil and pasta to it.
  2. Cook until the pastas are soft. Drain all the water and run cold water to the cooked pasta and keep aside.
  3. Now heat a kadai or wok, add olive oil and butter.
  4. Add onion and garlic, fry for 2 minutes.
  5. Add carrots and celery and fry well.
  6. Now add the tomato puree, paprika powder, basil, oregano and sugar. Fry until oil leaves the sides.
  7. Now add cooked pasta, salt and pepper powder.
  8. Mix well and close the lid and cook for 2 minutes.
  9. Transfer to a serving plate and top with shredded cheese.

Baked Macaroni And Cheese

Ingredients:
  • 2 cups Macaroni
  • 1 cup Mozzarella Cheese shredded
  • 4 tbsp Olive oil
  • 1/4 cup Onion finely chopped
  • 1 cup Tomato chapped
  • 1/2 tsp Ginger garlic paste
  • 1/2 tsp Pepper powder
  • 1 tsp Paprika powder
  • 2 tbsp Fresh Parsley chopped / Coriander chopped
  • 1 tsp Seasoning dry herbs (oregano, rosemary, savory, dill seeds and parsley)
  • Salt to taste


Method:

  1. Boil water in a large vessel. When the water is boiling hot add the macaroni and little salt.
  2. Cook until soft. Strain the water and run cold water on macaroni and keep aside.
  3. Preheat the oven 375 F.
  4. Spray or apply oil on a baking tray and keep aside.
  5. Heat a kadai or wok, add oil, add onion, ginger garlic paste and pepper powder.
  6. Fry well until onions are golden brown, now add tomatoes and fry well.
  7. When oil leaves the sides, add paprika powder, salt and dry herbs. Stir well.
  8. Add 1/4 cup of water, and allow to boil.
  9. Now add the cooked macaroni and keep stirring.
  10. Now remove the kadai from heat and keep aside.
  11. Add 1/4 cup of cheese to the macaroni and mix well.
  12. The cheese will start melting due to the heat.
  13. Transfer this to the baking tray. Spread evenly with a spatula.
  14. Now sprinkle remaining cheese on top of the macaroni.
  15. Place the tray in the oven. Bake for 6 mins, until the bubbles start forming on the surface.
  16. Now switch the oven to Broil mode.
  17. Broil for 3 mins or until the cheese has turned to golden brown color.
  18. Remove from oven and rest it for 5 minutes.
  19. Now take a knife and cut into pieces.
  20. With a flat spatula remove each piece and serve on a plate.
  21. Garnish with parsley and serve hot.
