Watermelon juice

Ingredients:
  • 2 cups Watermelon fruit
  • 1/4 " piece Ginger
  • 2 tbsp Honey
  • 2 Ice cubes



 
Method:
  1. Put the watermelon fruit, ginger and honey in a blender.
  2. Blend until smooth juice is formed.
  3. Put few ice cubes in a tall glass.
  4. Pour this blended juice over it and serve immediately.
  5. Very good for refreshing.

Vermicelli Kheer

Ingredients:
  • 1 cup Roasted thin vermicelli
  • 4 cups Milk
  • 1 tsp Ghee
  • 1 tbsp Cashew nuts broken
  • 1 tbsp Raisins
  • 1/2 tsp Cardamon powder
  • 3/4 Cup Sugar
  • 1 pinch Salt
  • 1 tsp Grated Pistachios
  • 1 pinch Saffron




Method:
  1. Break the long vermicelli into small pieces by crushing with hands.
  2. Take a microwave safe bowl add vermicelli and ghee in it.
  3. Mix well so the vermicelli is coated with ghee.
  4. Now microwave for 1 1/2 minutes.
  5. Remove and add cashew nuts and raisins. Mix well and again microwave for 1 minute.
  6. Check if the nuts are light brown or else microwave for one more minute.
  7. Do not burn the vermicelli.
  8. Now add milk, sugar, salt and cardamon powder and mix well.
  9. Now microwave for 10 minutes, stirring once in between.
  10. Now remove and mix well and transfer to a serving bowl and garnish with pistachios and saffron.
  11. Serve hot or chilled.
Note:
  1. As each ones microwave model is different, microwave the kheer until the vermicelli starts floating on the surface.

Mango Lassi / Smoothie

Ingredients:
  • 1 cup Mango pulp or puree
  • 1 1/2 cup Milk chilled
  • 1/2 cup Yogurt
  • 4 tbsp Sugar
  • 1 pinch Cardamon powder



Method:
  1. Add mango and milk in a blender and blend till the pulp is smooth.
  2. Now add yogurt, sugar and cardamon powder and blend again.
  3. Transfer to a tall glass and serve immediately.

Note:
  1. If the smoothie is very thick, dilute by adding more milk.

Mango Milkshake

Ingredients:
  • 1 cup mango pulp or puree
  • 2 cups Milk chilled
  • 2 tbsp Fresh cream
  • 2 tbsp Whipped cream
  • 4 tbsp Sugar



Method:
  1. Add mango pulp and 1 cup of milk in a blender and blend to a smooth paste.
  2. Now add remaining milk, sugar and fresh cream, blend again.
  3. Now transfer the smoothie to a tall glass.
  4. Gently place whipped cream on top of the smoothie.
  5. Serve chilled immediately
Note:
  1. If the smoothie is very thick, dilute it by adding more milk.

Chikoo / Sapota Milkshake

Ingredients:
  • 1 cup Chikoo sliced (fresh / frozen)
  • 2 glasses Milk chilled
  • 2 tbsp Fresh cream
  • 4 tbsp Sugar



 
Method:
  1. Add chikoo and 1/2 cup of milk in a blender, blend it until smooth.
  2. Now add remaining milk, sugar and fresh cream.
  3. Blend it for few seconds.
  4. Pour into a tall glass and serve immediately.
  5. Ummmm Enjoy !!!

Note:
  1. This fruit is very rich in Vitamin A, which is god for vision and also kills parasites in our internal organs.

Apple Milkshake

Ingredients:
  • 1 Apple
  • 1 1/2 glasses Milk chilled
  • 2 tbsp Sugar


Method:
  1. Peel the skin of the apples and slice them.
  2. Now add this into a blender along with 1 cup of milk.
  3. Blend til smooth.
  4. Now add the remaining milk and sugar.
  5. Blend for few more minutes and pout into a tall glass.
  6. Serve immediately. 
Note:
  1. An apple a day keeps the Doctor away.
  2. But nowadays we cant use the fruit as it is.
  3. As wax is applied on the apples for shine, it is better to peel the skin and use.
  4. Apples are very good source of fibre and also decreases Cholesterol level.

Atukkullu Payasam / Poha Kheer

Ingredients:
  • 1/2 cup Beaten rice / Poha / Atukkullu
  • 1 cup Milk
  • 1/2 cup Sugar or Jaggery
  • 1/4 tsp Cardamon powder
  • 1 tbsp Cashew nuts broken
  • 1 tbsp Raisin
  • 1 tbsp Ghee



 
Microwave Method:
  1. Take a microwave safe bowl, add ghee, cashew nuts and raisins.
  2. Microwave for 1 minute or until light brown.
  3. Add beaten rice in it. Mix well
  4. Now microwave for 3 minutes stirring in between until light brown
  5. Now add milk, sugar or jaggery and cardamom powder.
  6. Mix them all well.
  7. Now microwave for 7 minutes.
  8. Remove and stir well.
  9. Again microwave for 10 minutes.
  10. The beaten rice should be soft and the milk should be reduced.
  11. If not, microwave again for 5 more minutes.
  12. Remove and serve hot or cold.



Stove top Method:
  1. Heat a pan, add ghee, fry cashew nuts and raisins till golden brown.
  2. Remove and keep aside.
  3. In the same pan add beaten rice and fry well until light brown.
  4. Now pour the milk in to it.
  5. Add sugar or jaggery and cardamom powder.
  6. Allow to boil. Keep stirring in between.
  7. Boil the milk until the beaten rice is cooked and the kheer becomes slightly thick.
  8. It will take 12-14 minutes.
  9. Remove and transfer to a bowl.
  10. Serve hot or cold.
  11. Enjoy!!!

Chocolate Cold Coffee

Ingredients:
  • 1 tsp Instant coffee powder (nescafe)
  • 1 tbsp Sugar
  • 2 scoops Vanilla Ice-cream
  • Hershey's Chocolate syrup
  • 1 glass Cold milk 
  • 1/4 cup Hot water



Method:
  1. In a bowl add 3/4 tsp coffee powder, add hot water to it and dissolve well.
  2. Now add this dissolved coffee mixture in a blender.
  3. Add milk, sugar and 1 scoop ice-cream.
  4. Blend for few seconds.
  5. Now take a tall glass.
  6. Pour chocolate syrup on the inner surface of the glass as a design.
  7. Immediately pour the cold coffee to 3/4 of glass.
  8. Now top with remaining ice-cream.
  9. Finally sprinkle with left over coffee powder.
  10. Enjoy this chilled chocolate cold coffee.

Moong Dal Payasam / Kheer

Ingredients:
  • 1 cup Moong dal
  • 2 cup Jaggery
  • 1 cup Shredded coconut
  • 1/4 tsp Cardamon powder
  • 2 tbsp Raisins
  • 2 tbsp Cashew nuts broken
  • 2 tbsp Ghee




Method:
  1. Heat a pan and dry roast moong dal to light golden brown.
  2. Remove and wash well with water.
  3. Now add the moong dal in a pressure cooker, add water for it to cook.
  4. Cook for 2 whistles.
  5. Remove the lid and add jaggery, if the dal is thick add water to dilute it. Allow to boil.
  6. Grind the coconut to a fine paste with little water.
  7. Add this to the moong dal, mix well.
  8. Add cardamon powder and mix well.
  9. Allow to boil until no froth is seen on surface..
  10. Now heat a pan, add 1tbsp of ghee, fry cashew nuts and raisins.
  11. Add these roasted cashew nuts and raisins to the moong dal.
  12. Add left over ghee and stir well.
  13. Payasam is ready.
  14. Can be served hot or cold.
