Eggless Christmas Cake

                                       Merry Christmas and Happy New year




Ingredients:
  • 1 1/2 cup All purpose flour
  • 3/4 cup Sugar (powdered)
  • 1 pinch Salt
  • 1 tsp Baking Soda
  • 2 tbsp Orange Zest (Optional)
  • 1/3 cup Oil
  • 1 tbsp White Vinegar
  • 1 1/4 cup Cold water

Method:
  1. Sieve the flour, sugar, salt and baking soda together. Transfer it to a bowl.
  2. Add orange zest, oil, vinegar and water to the bowl and gently mix them without lumps.
  3. Now transfer it to a greased microwave oven safe bowl.
  4. Microwave on high for 6-8 mins.
  5. Check by inserting a toothpick.
  6. Allow it to cool and then flip it upside down on a flat plate.
  7. Allow it to cool completely and then layer it with any frosting.
  8. Enjoy this Eggless Orange Cake which is done in minutes.

Note:
  1. I used Orange zest for orange flavour. You can also use lemon zest or cocoa powder instead.
  2. This cake can also be made in normal baking oven as regular cakes are baked.

Fresh cream Fruit Cake

Ingredients for Orange cake: 
  • 6 Eggs  
  • 1 cup All purpose flour (maida)
  • 1 cup Powdered sugar
  • 1/2 tsp baking powder
  • 2 tbsp melted butter (optional)
  • 1 tsp vanilla extract 
  • 1 tbsp Orange Zest (scraped skin)
  • A pinch of salt
  • Baking tray
  • Non stick spray





Ingredients for decorating:
  • 1 pint Heavy whipping cream
  • 3 drops  Yellow food color
  • 1 cup Sugar  
  • 1 Orange
  • 1 Kiwi fruit
Method:
  1. Preheat the oven to 375 F.
  2. Separate the egg whites from egg yolks and whisk the egg whites in the hand mixer, until the whites turn fluffy and stand.
  3. Now whisk the yolks also separately, to it add sugar and butter, blend them well.
  4. Take the yolk mixture and gently fold in to the egg whites, so that the egg whites does not loose its texture.
  5. In a bowl add the flour, baking powder and salt. sieve them together so they easily fold into the egg mixture.
  6. Now slowly add the flour in to the egg mixture and mix very gently. See that no lumps are formed.
  7. Now add the orange zest and vanilla extract and mix well.
  8. Divide this into two portion and spread this mixture on the oil sprayed round baking tray and tap it little to spread evenly and bake it in the oven for 20mins.
  9. Remove and repeat with other cake mixture.
  10. Check by putting a toothpick or knife through  the cake.ti should come out clean only then the cake is done.
  11. This is the Orange Cake.
  12. Now we have two sheets of cake.
  13. Allow the cakes to cool completely.
Method for Decorating:
  1. Take a bowl add the heavy whipping cream, sugar and food color.
  2. Whip with an electric beater until the soft peaks are formed.
  3. Now place one sheet of cake on a flat plate and cover with the whipped cream.
  4. Now replace the other sheet on top of it and cover completely with whipped cream.
  5. Now using your cake decorating cone, design your cake.
  6. Now remove the pulp from the oranges and peel the skin of kiwi and slice it.
  7. Decorate these fruit pieces on the cake.
  8. Chill the cake and then serve.

Marble Cake

Ingredients:
  • 1 1/2 cups All purpose flour
  • 1 1/4 cups sugar (powdered)
  • 3/4 cup butter (at room temperature)
  • 3/4 cup oil
  • 5 Eggs
  • 1 tsp Vanilla extract
  • 3 tbsp Cocoa Powder (Hershey's)
  • 1/2 tsp Baking powder 
  • Oil spray



 Method: 
  1. Preheat the oven to 350 F. Spray or apply oil on the baking tray.
  2. Separate the egg whites from egg yolks.
  3. Sift the flour, sugar and baking powder into a bowl.
  4. Use a hand beater on low speed to combine the dry ingredients.
  5. In another bowl, blend the butter until a smooth.
  6. Now add oil, egg whites, and vanilla extract. Mix well with the blender.
  7. Now add the flour slowly to the egg mix and blend well without any lumps.
  8. Now divide this cake batter into two portions.
  9. In one portion add the cocoa powder and mix well.
  10. Now put this two mixture in two zip locks.
  11. Close the zip and cut the bottom side end of the bags.
  12. Now in the centre of the baking tray squeeze the white cake mix to 2" height.
  13. Now squeeze the brown chocolate cake mix surrounding it.
  14. In the same way make circles in alternate colors.
  15. When finished tap the tray so the air escapes.
  16. Place in the oven and bake of 30 mins.
  17. Check by inserting a knife in middle of the cake.
  18. If it comes out clean and clear, then the cake is done.
  19. Remove allow to cool, then turn the baking tray over a plate and then cut cake into slices.
  20. Will the surprised to see the beautiful colors of the cake.
  21. Be creative and design the colors as you wish.
  22. Enjoy !! 
Note: 
  1. I have used only egg whites here, so that it will have perfect white color when layered with brown chocolate cake.

Fruit Cake

Ingredients:
  • 1 cup All purpose flour
  • 1 cup Butter
  • 1 cup Sugar
  • 1 cup eggs
  • 1 tsp Baking powder
  • 1 cup All dry fruits mix
  • 1/2 tsp Spice powder (powder of cinnamon,cloves and cardamom)





Method:
  1. Preheat the oven to 345 F.
  2. In a bowl add butter which is at room temperature.
  3. Using an electric blender, blend the butter to a smooth paste.
  4. Add all the sugar and blend well to a paste.
  5. Now add eggs little by little and blend it.
  6. In an other bowl sieve flour, baking powder and spice mix.
  7. Take an other bowl add the dry fruits, add 2 tbsp of all purpose flour and mix well.
  8. Now add the flour mixture to the egg mixture little by little.
  9. Keep blending so no lumps are formed.
  10. Now add all the dry fruits to it and just mix by folding them with a spatula.
  11. Spray oil on the baking tray, pour the cake mixture in it and tap the tray, so that all air escapes.
  12. Now bake for 345 mins. Check by inserting a knife, when comes out clear, the cake is done.
  13. Remove and allow it to cool.
  14. Cut into slices and serve.

Note:
  1. The dry fruits must be tossed with dry flour or else while baking the dry fruits will settle at the bottom.

Devil's Chocolate Cake

Chocolate Cake

Ingredients:
  • Oil Spray
  • 4 cups All-purpose flour
  • 2 cups Sugar
  • 3/4 cups Cocoa powder (Hershey’s)
  • 2 teaspoons Baking soda
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1/2 cup Canola oil
  • 3Eggs
  • 1 teaspoon Pure vanilla extract
  • 1 cup Freshly brewed coffee(optional) or 1 cup Water



Method:

  1. Preheat the oven to 350 F. Spray or apply oil to the baking tray.
  2. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into a bowl.
  3. Use an hand beater on low speed to combine the dry ingredients.
  4. In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  5. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine.
  6. Pour the batter into the prepared baking tray and bake for 35 to 40 minutes, until a knife or toothpick  comes out clean from the cake when inserted through. Cool in the tray for 30 minutes, then turn them out onto a cooling rack and cool completely. 
  7. Slice the cake in between to make 2 sheets.

Dark Chocolate frosting
(This can be prepared days earlier)

Ingredients:
  • 1/2 cup Cocoa powder
  • 1/2 cup Boiling water
  • 2 1/4 cups Butter, room temperature
  • 1/4 cup Confectioners' sugar, sifted
  • 1/4 tsp Salt
  • 1 1/2 pounds Semisweet chocolate, melted and cooled  
Method:

  1. Combine cocoa and the boiling water, stirring until cocoa has dissolved.
  2. With an hand mixer on medium-high speed, beat butter, confectioners' sugar and salt until pale and fluffy. Reduce speed to low.
  3. Add melted and cooled chocolate, beating until combined and scraping down sides of bowl as needed.
  4. Beat in the cocoa mixture.
  5. This frosting can be refrigerated up to 5 days.
  6. Before using, bring to room temperature, and beat on low speed until smooth again.

Light Chocolate frosting

Ingredients:
  • 1 cup Heavy whipping cream
  • ½ cup Confectioner’s sugar (powdered sugar)
  • 3-4 tbsp Cocoa powder

Method:
  1. Sift the sugar and cocoa separately and keep aside.
  2. Whip cream on low speed for 3-4 minutes only till its thick. Do not over beat.
  3. While whipping the cream halfway add the sugar and cocoa powder slowly.
  4. The final result should be a smooth spreadable mixture.
  5. It should not be in a liquid state. Taste frosting for sweetness and add more Sugar if required. 


Final Procedure:

  1. Place 1 layer of chocolate cake, with a knife or spatula spread the top with dark chocolate frosting.
  2. Place the second layer on top, spread the dark chocolate frosting evenly on the top and sides of the cake.
  3. Now using the piping cone decorate the top of the cake with Light chocolate frosting.

Pineapple Cake


Ingredients:
  • 2 sheets Sponge cake
  • 1 ounce Fresh whipping cream
  • 1 tin pineapple pieces 
  • Sugar as needed
  • Sweetened Cherries




Method: 
  1. Whip the whipping cream and sugar with the hand mixer until the cream becomes fluffy.
  2. In a bowl add the liquid from pineapple tin. Mix sugar in it and keep aside.
  3. Take the cake sheets sprinkle the pineapple sugar liquid, this keeps the cake moist.
  4. Spread the whipped cream evenly add some pineapple pieces. Now place the other layer of cake sheet on top of the applied cream.
  5. Sprinkle the pineapple sugar liquid and finally spread the remaining whipped cream.
  6. Decorate with chunks of pineapples and cherries.
  7. Soft, moist fresh cream pineapple cake is ready.
  8. Serve chilled.
  

Sponge Cake


 
Ingredients:

  8. Check by putting a toothpick or knife through  the cake.ti should come out clean only then the cake is done.
  9. This is the Sponge cake.
  10. Using this  basic cake we can make different flavours of cake recipes.

Pan Cakes

Ingredients:
  • 1 1/2 cup All purpose flour ( Maida)
  • 3 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 2 tbsp Sugar
  • 1 1/4 cup Milk
  • 1 Egg 
  • 3 tbsp Melted butter

                                            
Chocolate Pancakes

Method:
  1. Sieve the flour without any lumps.
  2. Sift together flour, baking powder, sugar, and salt.
  3. Make a well in the center and pour the milk, egg, and melted butter.
  4. 
    Honey Pancakes
    
  5. Whisk them all together to make a smooth batter.
  6. If the batter seems too thick to pour, add a little more milk. 
  7. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
  8. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom; turn and brown the other side.
  9. 
    Fruit Pancakes
    
  10. Now use your creativity and serve.
  11. Can be served with fruits like strawberries, blueberries, bananas, maple syrup, honey or chocolate sauce and topped with fresh whipped cream.

Black Forest Cake


Ingredients:
  • 1 box of sweetened cherries
  • 2 sheets Chocolate cake
  • 1 pint Fresh whipping cream
  • 3 tsp Sugar
  • 1/2 cup Water



Method:

  1. Take blender,blend whipping cream and sugar and keep aside.
  2. In a small bowl add water and sugar mix well keep a side.
  3. Now take the Cake sheets sprinkle sugar water and  spread the cream and top it of with Cherries now the another layer of cake repeat the same process twice.
  4. And lastly spread the cream on the cake and top it of with cherries, and sprinkle the shredded chocolate.
