Drumstick Fry

Ingredients:
  • 4 Fresh Drumsticks / frozen
  • 1 cup Onion finely chopped
  • 1/2 cup Tomatoes chopped
  • 2 cloves Garlic
  • 2 tbsp Coriander leaves chopped
  • 1/2 cup Roasted peanuts
  • 3 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 sprig Curry leaves
  • 1/4 Turmeric powder
  • 1 tsp Chili powder
  • 1 1/2 Coriander powder
  • Salt to taste




Method :
  1. Wash and cut the drumstick into 2" pieces and keep aside.
  2. Coarsely powder the roasted peanuts and keep aside.
  3. Now heat a kadai or wok.
  4. Add oil, when hot, add mustard seeds, whey they splutter add curry leaves, onions and garlic.
  5. Fry well, now add tomatoes to it, fry until soft.
  6. Add turmeric powder, chili powder and coriander powder.
  7. Saute it and pour 2 cups of water.
  8. When the water boils add drumsticks and salt.
  9. Adjust the water, it should cover all the drumstick pieces.
  10. Reduce the flame to medium low. Cover the lid and cook until all the water is evaporated.
  11. Stir in between.
  12. Now increase the flame to high and keep roasting.
  13. Once the drumsticks are dry fried, add the powdered peanuts.
  14. Mix well, add coriander leaves, saute it.
  15. Transfer to a boil and serve as a sidedish with rice.
