- 1 Plantain (unripe banana)
- 1/4 cup Onion chopped
- 1/2 cup Tomatoes chopped
- 1 clove Garlic crushed
- 2 tbsp Oil
- 1/2 tsp Chili powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1 cup Water
- 1/2 tsp Mustard seeds
- Salt to taste
Method:
- Peel the outer green layer of the plantain. Cut into thick disc shape.
- Put these in a bowl of water and keep aside.
- Heat a non stick pan, pour oil, add mustard seeds, when splutter add onion and garlic.
- Fry them well. Now add tomato and fry till oil leaves the sides.
- Add chili powder, coriander powder and turmeric powder. Saute it.
- Now add water, when it boils add salt and the chopped plantains.
- Mix them well. Reduce the flame to medium heat, cover the lid and cook until all the water is evaporated.
- Saute in between.
- Now increase the flame to high and roast the plantain to nice golden brown.
- Transfer to a serving bowl.
- Serve as a side dish with rice.
