- 1 big brinjal or 2 small Brinjal
- 1/2 tsp Turmeric powder
- 1 tsp Chili powder
- 1 1/2 tsp Coriander powder
- 1 tsp Cumin powder
- 1 1/2 tsp White vinegar
- 1/2 tsp Pepper powder
- 1/4 tsp Garam masala
- 1 tsp Coriander leaves chopped
- Salt to taste
- Oil spray
Method:
- Preheat the oven to 400 F.
- Discard the green end of the brinjal and slice them into thick circles.
- Put in a large bowl and add all the ingredients above, except oil.
- Mix them well, all the brinjal slices must be coated with this masala.
- Now arrange the brinjal slices on the baking tray evenly.
- Spray oil on them and place in the oven.
- Bake for 7-8 mins.
- Remove and transfer to a serving plate.
- Garnish with coriander leaves.
- Great as a side dish for curd rice.
