- 1/2 cup Beaten rice / Poha / Atukkullu
- 1 cup Milk
- 1/2 cup Sugar or Jaggery
- 1/4 tsp Cardamon powder
- 1 tbsp Cashew nuts broken
- 1 tbsp Raisin
- 1 tbsp Ghee
Microwave Method:
- Take a microwave safe bowl, add ghee, cashew nuts and raisins.
- Microwave for 1 minute or until light brown.
- Add beaten rice in it. Mix well
- Now microwave for 3 minutes stirring in between until light brown
- Now add milk, sugar or jaggery and cardamom powder.
- Mix them all well.
- Now microwave for 7 minutes.
- Remove and stir well.
- Again microwave for 10 minutes.
- The beaten rice should be soft and the milk should be reduced.
- If not, microwave again for 5 more minutes.
- Remove and serve hot or cold.
Stove top Method:
- Heat a pan, add ghee, fry cashew nuts and raisins till golden brown.
- Remove and keep aside.
- In the same pan add beaten rice and fry well until light brown.
- Now pour the milk in to it.
- Add sugar or jaggery and cardamom powder.
- Allow to boil. Keep stirring in between.
- Boil the milk until the beaten rice is cooked and the kheer becomes slightly thick.
- It will take 12-14 minutes.
- Remove and transfer to a bowl.
- Serve hot or cold.
