Vegetable Hakka Noodles

Ingredients:
  • 1 pack Noodles (1/2 lb)
  • 1/4 cup Cabbage finely chopped
  • 1/4 cup Carrot finely chopped
  • 1/4 cup Green and Red Capsicum chopped
  • 1/4 cup Beans chopped
  • 1/4 cup Spring Onions chopped
  • 1/4 cup Red onion chopped
  • 2 tbsp Freshly ground pepper powder
  • 2 tsp Soya sauce
  • 2 tbsp Vinegar
  • 3 tbsp Oil  
  • Salt to taste




Method:
  1. Chop all the vegetables into thin strips.
  2. Boil water in large quantity, add salt and 1 tsp oil.
  3. Add the noodles and boil it. Check the noodles by pressing it with fingers, it should cut into half when pressed. Do not overcook.
  4. Strain the noodles and rinse with cold water.
  5. Put this noodles in a large bowl of cold water.
  6. Now heat a kadai or wok, keep the flame high.
  7. Add oil, when hot add onion and cabbage. Fry well.
  8. Now add carrot and beans. saute for few mins.
  9. Now add the green and red capsicum, saute it.
  10. Drain all the water from noodles and add to the kadai.
  11. Using tong or two spatula start mixing well.
  12. Add soya sauce, vinegar, pepper powder and salt.
  13. Mix well until the noodles is covered with all the ingredients.
  14. Finally add the spring onions and saute it.
  15. Transfer to a serving plate and serve hot.
