Plantain Fry

Ingredients:
  • 1 Plantain (unripe banana)
  • 1/4 cup Onion chopped
  • 1/2 cup Tomatoes chopped
  • 1 clove Garlic crushed
  • 2 tbsp Oil
  • 1/2 tsp Chili powder
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1 cup Water
  • 1/2 tsp Mustard seeds
  • Salt to taste




Method:
  1. Peel the outer green layer of the plantain. Cut into thick disc shape.
  2. Put these in a bowl of water and keep aside.
  3. Heat a non stick pan, pour oil, add mustard seeds, when splutter add onion and garlic.
  4. Fry them well. Now add tomato and fry till oil leaves the sides.
  5. Add chili powder, coriander powder and turmeric powder. Saute it.
  6. Now add water, when it boils add salt and the chopped plantains.
  7. Mix them well. Reduce the flame to medium heat, cover the lid and cook until all the water is evaporated.
  8. Saute in between.
  9. Now increase the flame to high and roast the plantain to nice golden brown.
  10. Transfer to a serving bowl.
  11. Serve as a side dish with rice.
