Stuffed Bhindi / Ladies Finger / Okra

  • 15 Bindi
  • 1/2 cup shredded Coconut
  • 3 tbsp Coriander leaves chopped
  • 2 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 6 Whole red chillies
  • 1 pinch  Asafatida
  • 1 tbsp Oil 
  • Salt to taste

  1. Heat a pan and dry roast coriander seeds, cumin seeds and red chillies.
  2. Cool them and grind along with coconut, salt and asafatida to a fine powder.
  3. Remove and transfer to a bowl, add coriander leaves and mix well.
  4. Preheat an oven to 450 F.
  5. Wash the bindi and pat dry with a paper towel.
  6. Cut the bindi vertically, just to slit it.
  7. Now stuff the mixed grounded ingredients into it.
  8. Place all the stuffed bindi on the baking flat tray, the stuffed side facing up.
  9. Spray oil on the stuffed bindies and bake for 15 mins.
  10. Remove and transfer to a serving plate.
  11. Serve as a side dish with rice, sambhar and ghee.
  12. Enjoy!
