Egg Tomato Fry

  • 4 Eggs
  • 1/2 Cup finely chopped Onion
  • 1/2 Cup chopped Tomato
  • 1/2 tsp Chili powder
  • 1 tsp Coriander powder
  • 1/4 tsp Turmeric
  • 1/2 tsp Mustard
  • 2 tsp Oil
  • 2 tsp chopped Coriander
  • Salt to taste

  1. Boil the eggs with water for about 10mins.
  2. Remove the shell and cut the eggs into half and keep aside.
  3. Now heat a pan, add oil, add mustard. When they splutter add onion and fry them.
  4. Add tomato and fry until oil is left towards sides.
  5. Add chili powder, coriander powder and turmeric and mix well.
  6. Now add 1/2 cup of water and salt. Allow to boil.
  7. Now gently place the eggs in the pan, the egg yolk facing downwards.
  8. reduce the flame. Once all the water is evaporated, gently turn the eggs to the other side.
  9. See that all the masala is coated on the eggs.
  10. Add coriander and saute it gently.
  11. Transfer to the serving plate.
  12. Serve with rice as side dish.
  13. Kids will eat in one gulp.
  14. Enjoy!
