- 4 Eggs
 - 1/2 Cup finely chopped Onion
 - 1/2 Cup chopped Tomato
 - 1/2 tsp Chili powder
 - 1 tsp Coriander powder
 - 1/4 tsp Turmeric
 - 1/2 tsp Mustard
 - 2 tsp Oil
 - 2 tsp chopped Coriander
 - Salt to taste
 
Method:
- Boil the eggs with water for about 10mins.
 - Remove the shell and cut the eggs into half and keep aside.
 - Now heat a pan, add oil, add mustard. When they splutter add onion and fry them.
 - Add tomato and fry until oil is left towards sides.
 - Add chili powder, coriander powder and turmeric and mix well.
 - Now add 1/2 cup of water and salt. Allow to boil.
 - Now gently place the eggs in the pan, the egg yolk facing downwards.
 - reduce the flame. Once all the water is evaporated, gently turn the eggs to the other side.
 - See that all the masala is coated on the eggs.
 - Add coriander and saute it gently.
 - Transfer to the serving plate.
 - Serve with rice as side dish.
 - Kids will eat in one gulp.
