Stuffed Bhindi / Ladies Finger / Okra
Ingredients:
- 15 Bindi
- 1/2 cup shredded Coconut
- 3 tbsp Coriander leaves chopped
- 2 tsp Coriander seeds
- 1 tsp Cumin seeds
- 6 Whole red chillies
- 1 pinch Asafatida
- 1 tbsp Oil
- Salt to taste
- Heat a pan and dry roast coriander seeds, cumin seeds and red chillies.
- Cool them and grind along with coconut, salt and asafatida to a fine powder.
- Remove and transfer to a bowl, add coriander leaves and mix well.
- Preheat an oven to 450 F.
- Wash the bindi and pat dry with a paper towel.
- Cut the bindi vertically, just to slit it.
- Now stuff the mixed grounded ingredients into it.
- Place all the stuffed bindi on the baking flat tray, the stuffed side facing up.
- Spray oil on the stuffed bindies and bake for 15 mins.
- Remove and transfer to a serving plate.
- Serve as a side dish with rice, sambhar and ghee.
